Bacon Wrapped Onion Rings

Yes. You read that correctly. I said bacon wrapped onion rings.
In the last several years I have made many things that I have wrapped in bacon and only a few have made it to my site. Why? Because we either ate it before I could photograph it OR they turned out what I like to call ‘Ugly-Delish’. You get the point.
Bacon wrapped tater tots (OMG), bacon wrapped dates ( ‘Ugly-Delish’), bacon wrapped jalapenos stuffed with cheese and hot sauce (on fire delicious) and today I give to you what quite possibly is the best bacon wrapped creation thus far: bacon wrapped onion rings!

This recipe encompasses all of the yum factors: crunchy, savory, sweet, zesty AND spicy. When you make them you can dial up or down the spice level depending on the kind of sauce you use. The first time I made these I used Redhead Hot Sauce from Best Boy and Co.This time, however, I used Honey BBQ Wing Sauce from Saucy Mama. SM recently sent me a pack of sauces and dressings to sample and integrate into a recipe. That recipe, if chosen, would earn me a ‘Golden Ticket’ to the World Food Championships in November in Las Vegas. Once there I would compete by making my chosen Saucy Mama recipe. It’s fun- I have been to this in the past (read here).
So I made this recipe, got the technique down and decided that THIS was going to be the winning recipe. I got the post ready, set it to come out 2 days before the recipes were due. I knew this was the winner. I have seen what the winners make at WFC. I am at an advantage. At that very same moment another Saucy Mama competitor posted very close to the exact same recipe! We BOTH have bacon on the brain!
So I decided to share my other SM recipe. I didn’t want to share a recipe that was too closely related to another. I loved my backup recipe and it was original and interesting so I chose to enter that one. Will it win? I don’t know. But it’s delicious and I love it

Ready for some bacon wrapped onion rings?
Ingredients
- 3 large onions (I have used Walla Walla and Vidalia) that are more ball shaped and less oval shaped, peel outer skin only
- 1 pound of good quality bacon ( I used Indiana Kitchen)
- 8-10 oz of hot sauce of your choice OR bbq sauce
- 1 C light mayo or Greek yogurt
Instructions
- Preheat oven to 350 degrees.
- Line 2 rimmed baking sheets with foil, silpat or parchment.
- Slice prepared onions into 1/2" thick rings.
- Discard rings that are too thin.
- Remove the inner layers leaving only the outside few- diameter (1/3 to 1/2" thick) finished ring.
- Place rings in a shallow dish.
- Pour sauce over rings and use tongs to flip carefully to coat.
- Taking one bacon strip at a time, wrap around ring with a ever-so-slight overlap.
- You may need 2 strips to cover the entire onion ring.
- It is important to overlap a bit so they bake well and don't fall apart.
- Place on the sheet (not touching each other) and bake for 45 minutes or until bacon is fully cooked and somewhat firm.
- Remove from oven and allow to cool.
- Use a wide spatula to carefully remove ring (in one piece) and top burgers OR eat alone with a dip!
- Dip:
- Whisk leftover (1/3 C) sauce you used for onions with 1 C of light mayonnaise or Greek yogurt.
